Eggs are a symbol of springtime, regardless of what celebrations you take part in. And, unless you are an admirable vegan, they are one of the most magical foods out there. Scrambled, poached (MY personal fave), fried, omelet, fritatta, souffle… I could go on. And eggs are part of the holy trinity of baking – add them to some flour and butter and you are off to the races for a plethora of dishes! WHERE would we be without the egg?

I suppose that depends on whether you think the chicken came first. HA – couldn’t resist. 😛
